Potsticker Noodles

An easy Asian-inspired dish that can be topped with broccoli or tofu dumplings.

Potsticker Noodles — This one is a quick, easy recipe and tastes just like pork pot stickers! 

INGREDIENTS

1 16 ounce bag of egg noodles

2 tablespoons of neutral oil (I prefer sunflower)

2 cloves of minced garlic (1 tablespoon pre-minced)

1 14 ounce bag of cole slaw mix

3 tablespoons of soy sauce

2 teaspoons of rice vinegar

1 teaspoon of ground ginger

½ teaspoon of white pepper

½ teaspoon of smoker paprika

¼ cup fake chicken broth — I use Better than Bouillon No Chicken Base to create a broth

INSTRUCTIONS
1. Cook egg noodles per bag instructions.

2. Meanwhile, coat the bottom of a sauteé pan with oil and add garlic and coleslaw mix once oil is shimmering. Cook down garlic and coleslaw down until wilting then add soy sauce, rice vinegar, smoked paprika, ground ginger, and white pepper.

3. After about 2 minutes, then add fake chicken broth. Take off heat. (It’s okay if it feels super saucy–it’ll make this awesome sauce).

4. Drain cooked noodles and add coleslaw stir-fry mix and mix everything together in the big pasta pot.

*I’d highly recommend topping this dish with steamed broccoli (about 1 10 ounce bag should do it!) and/or some ready-made dumplings. Personally, I love to use Nasoya’s Tofu and Vegetable Dumplings. You can find them here.
